Homemade recipe
Pretty salmon and pea patties
Suitable for 10 months+
Using store cupboard items, these salmon fish cakes provide essential omega 3, vitamins C and D. They are a great finger food for toddlers who like to 'do it themselves'.
Makes 3 toddler portions
Preparation time: 15 minutes
Cooking time: 15 minutes
No added soya
No added milk
Ingredients:
- 2 medium potatoes, peeled and quartered
- 2 tsp vegetable oil
- 1 small onion, very finely chopped
- Quarter of a medium red pepper, very finely chopped
- 60g (2.5oz) forzen petit pois
- 105g (3.5oz) - about half a small can of red salmon - either skinless and boneless or with no added sat
- A little flour or cornflour for shaping and additional oil for frying
Please note:
Remember not to add salt to any of your baby's recipes. PLease check ingredients carefully as some product may contain allergens that you are unaware of.
Method:
- Boil the potatoes in unsalted water until soft, drain and mash. (Use a little of your baby's favourite milk if you need additional liquid.)
- Fry the onion and red pepper in the oil until softened.
- Cooke the peas in teh microwave or in boiling unsalted water untiljust tender. Drain.
- If using salmon with bones, carefully remove the softened bones from the salmon, or mash them extremely well with a fork.
- Combine the salmon, peas, onion and peppers, and allow to cool a little.
- Divide the mixture into 8 pieces, and using a little flour, shape them into rounds, and flatten a little.
- Heat a little oil in a non stick pan and fry gently until lightly browned, allowing 2 patties per serving.
- Let your toddler's portion cool a little before serving.
- The patties can be frozen at once. They are best either fried or oven baked from frozen.
Serve with some halved cherry tomatoes, and soft cooked carrot batons.
