This tasty tomato dish is one of the great recipes we picked out from hundreds sent in by Cow & Gate mums and dads. Created by Lee Trevor for his friend’s daughter, Matilda, it uses Cow & Gate’s Tomato + Basil Sauce, with a hint of chilli and garlic for a delicious, baby-sized kick! Method:
- Heat a little olive oil in a pan.
- Add the chopped onion, pepper, carrot and garlic. Add the chilli to taste (a little at first, it doesn't have to be hot - just infused with the chilli flavour).
- Cook to the desired texture – at 6-7 mins they'll be cooked but still a little hard, 10-12 mins will be soft enough for your baby.
- Add the Cow & Gate Tomato + Basil Sauce and heat through.
- Allow to cool slightly and serve.
Makes multiple servings. Just freeze the remaining food into portions appropriate for your baby. Can be kept in the freezer for a maximum of 3 months.
